The producers of this coffee are located around the municipality of La Unión in the Southwestern department of Nariño, Colombia. Once the coffee has been dried, the farmers bring it directly to a Cóndor’s purchasing point to assist in exporting the coffee.
Exportadora de Café Cóndor, founded in 1987, was the first Colombian specialty coffee exporter to pay premiums to producers to recognize their efforts in producing quality coffee. Cóndor works closely with farmers to assist them in post-harvesting processes, tree nutrition, and agricultural practices. They also hold competitions in different regions to encourage and reward the production of high-quality coffee while also helping select the best lots for export.
Decaffeination Process:
This coffee is decaffeinated by Descafecol, located in Manizales, Colombia using Ethyl Acetate (EA) made from local sugar cane. This process can also be known as “Sugar Cane Decaf”. During the decaffeination process, the coffee is steamed to open up the cell structure of the bean, allowing the ethyl acetate to bond with the caffeine and separating it from the coffee. After the caffeine extraction, the coffee is steamed again to remove any traces of the ethyl acetate.
