Roberto Martínez grew up in a coffee-growing family; however, he spent most of his life cultivating vegetables. Poor prices and market conditions eventually caused Roberto to move to the USA, where he learned about the speciality coffee industry. In 2011, Roberto spent his savings to move back to Honduras where he purchased a small plot of land and planted his first coffee trees.
The Montecillos region is known for its cool temperatures and higher altitudes, allowing the coffee cherries to mature slowly creating a more complex flavour profile. Ripe cherries are pulped on-site and fermented for about 19 hours. The coffee is washed until the remaining mucilage is removed before being placed on raised beds to dry for approximately 15 days.
